Can I eat in the restaurant without staying at the hotel?
Yes.
Our restaurant is open to all guests, even without an overnight stay.
Kitchen & enjoyment
What is the cuisine of the Blue Goose?
Our cuisine follows an old idea: the route over the Alps.
As early as the 14th century, Salzburg traders brought home lemons, capers, olive oil and spices from Venice.
This gave rise to the New Salzburg Cuisine: alpine products combined with the lightness of the south.
Is the restaurant excellent?
Yes.
The Blue Goose wears two hoods by Gault&Millau and three forks by Falstaff.
Who is in the kitchen?
Max Sampl, our chef.
His claim: “From the foothills of the Alps over the Tauern through the plain to the sea, that is the culinary journey that I would like to take our guests on.”
Where do the products come from?
Many ingredients come from producers in Salzburg and the Alpine region.
Complemented by selected products from Friuli and Veneto.
Are there vegetarian or vegan dishes?
Vegetarian dishes are an integral part of our menu.
We also offer vegan options where possible.
A quick note when making the reservation will help us prepare.
Who chooses the wines?
Sommelier Tanja Haggenmüller curates our wine list, with a focus on Austria, Friuli and Europe.
Plus Zero Drinks, without any alcohol.
Who provides the service?
Celine Raunegger leads our service team – relaxed, at eye level, competent.
Your goal: to give you a good time.
Reservation & Visit
When is the restaurant open?
We serve warm cuisine Monday to Saturday from 12:00 p.m. to 9:00 p.m.
Special opening times apply during the Salzburg Festival.
Is there a business lunch?
Yes: a two-course menu, Monday to Friday, 12 p.m. to 5 p.m.

What is the difference between day and evening menu?
Our cuisine depends on the season, so both menus change regularly.
The day ticket is valid at lunchtime from 12 p.m. to 5 p.m. and changes weekly, including the business lunch.
From 5 p.m. the evening menu with a more extensive offering is available and changes monthly.
Our classic tartares made from natural beef, veal liver or sweetbreads, Viennese schnitzel or fried chicken are available to you all day long.
How do I reserve a table?
You can easily reserve up to 6 people online For 7 people or more, we ask you to send an inquiry by email
restaurant@blauegans.at.
How long is the table available?
We will keep your table free for you for two hours.
If you are delayed, we would be happy to receive a short message.
After 20 minutes we will reassign reservations that have not been made.
Would you like to stay longer?
Please let us know in advance and we will plan it.
What is the wine archive and can I just eat there?
A 14th century vault.
Once a wine cellar, later a jazz cellar.
Our wine supply and the products from our food factory are stored here.
On days with high demand or for larger groups, we also open it for regular restaurant operations.
Where do I sit in the restaurant?
In the historic vault, in the brasserie, in the wine archive or, in summer, in the guest garden.
Placement is subject to availability.
Please note your wishes for a bar (brasserie) or high table in the comments field of the online reservation.
Is the restaurant barrier-free?
Our house has stood since 1350 and has deliberately been preserved in its historical structure.
This brings with it steps that cannot be resolved structurally.
The restaurant is therefore not always barrier-free.
The wine archive is in the basement without a lift.
Speak to us in advance, we will be happy to support you.
Are children welcome in the restaurant?
With pleasure.

Is there a dress code?
No.
Are dogs allowed in the restaurant?
Yes, welcome.
How do I reach the restaurant?
Is there parking?
You can park in the old town garage A on Hildmannplatz, just a few steps away.
Have your ticket punched with us; the machine in the garage will automatically deduct the discount.

What rooms are there in the restaurant?
The vault, classic and handcrafted, 35 seats.
The brasserie, with hot food and finger food throughout, 30 seats.
The wine archive, exclusively bookable, 54 seats.
The guest garden, in good weather, 150 seats under orange, fig and olive trees.
Celebrations & Events
Can I book the wine archive exclusively?
Yes, at lunchtime and in the evening.

How many people can it accommodate?
Up to 54 guests seated, or more for standing receptions.
Can we have an aperitif before dinner?
Very welcome, at the bar in the wine archive or in the guest garden.
During Advent the guest garden is transformed into the ARTventgarten.
Do we as a group receive a common bill?
A total invoice for the group, no individual invoices.
Cash, card or, if desired, bank transfer by prior arrangement.

Menus & Groups
What types of menus are there for groups?
Three ways: classic on your own plate, as a tavolata with shared plates in the wine archive for 8 people or more or seasonally according to the current menu.
What are the seasonal menus?
Our menu changes monthly.
We would be happy to put together a menu for you from the current seasonal menu to suit the season.
Simply let us know the month before your reservation.
When do I choose a menu for the whole group?
For groups of 15 or more, we ask you to choose one of our menus so that at the table we talk more about being together than about ordering.
History of the house
Since when has the Blue Goose existed?
Since 1350. The oldest still existing inn in Salzburg, a place for travelers, Salzburg residents and guests from all over the world.
Why is the house called “Blue Goose”?
The historic tavern sign originally showed a blue-collared pheasant.
To many, the bird looked more like a goose, and so the name stuck over the centuries.
