How service should be

Light and floating, carefree.

If the lady in service thinks that I might want another beer and reaches with a slow speed for the glass that I have just emptied, then I, a professional like her, recognize the empathetic woman’s question in the delay in reaching: Another one? She doesn’t have to verbalize the question or force her way into the conversation that’s just started at my table.

My ironically colored, approving look and the barely visible wink with which I answer her question are enough for her: One more thing. Thanks. Not worth mentioning.

Small service primer for employees at eye level:
Don’t belittle yourself, the guest is not king. He/she is our guest, that’s enough. The guests are not always right either. Because it’s not about being right, it’s about ensuring that our guests have a good time with us and have experiences that enrich their lives. If everything goes well, they have learned something about themselves or have become close to themselves, perhaps through meeting others, perhaps through you.

Or better said: It’s about moments that give you GOOSE BUMPS. You as the host are the person who can create it. This is your power of design. Handle it responsibly.
